  2. Sear Mushrooms: Heat oil in a large skillet or wok. Sauté sliced shiitake mushrooms until browned and tender.
  3. Stir-fry Veg: Add broccoli florets and a splash of water; cover and steam for 2 minutes. Stir in garlic and ginger and cook until fragrant.
  4. Assemble: Toss in the cooked noodles, edamame, and sauce ingredients. Heat through until well-coated and glossy.

Plating & Garnishing

  • Base: A nest of soba noodles with broccoli and shiitake arranged on top.
  • Finish: A sprinkle of sesame seeds and a drizzle of the ginger-soy sauce.
