- Sear Tofu: Pat tofu dry and cube. Heat sesame oil in a wok. Sear tofu until golden on all sides. Transfer to a plate.
- Sauté Mushrooms: Add mushrooms to the wok and cook until browned and moisture has evaporated.
- Assemble: Prepare udon noodles as instructed. Add to the wok along with tofu, edamame, and sauce ingredients.
- Finish: Toss over medium heat until noodles are glossy and well-coated. Serve with shredded cabbage and sesame seeds.
Plating & Garnishing
- Base: Thick udon noodles coated in glaze with golden tofu and shiitake arranged on top.
- Finish: Scatter with sesame seeds and shredded red cabbage for color contrast.
