  1. Sauté aromatics: Heat olive oil in a medium saucepan. Sauté diced onion until softened (5 minutes). Stir in minced garlic and cook until fragrant (1 minute).
  2. Simmer sauce: Pour in crushed tomatoes, dried oregano, and dried basil. Cover and simmer gently for 20 minutes.
  3. Add beans: Stir in the white kidney beans and cook for an additional 5–7 minutes to allow flavors to meld.
  4. Finish: Stir in fresh basil and the optional nutritional yeast. Season with salt and pepper to taste.

Plating & Garnishing

  • Serving: Ladle over pasta, polenta, or use as a dipping sauce for crusty bread.
  • Finish: Tear fresh basil leaves over the top just before serving.
